Ingredients for 4 persons :
- 4 eggs
- 100 g heavy cream
- 10 cl of milk
- 2 slices of Paris ham
- 5g butter
- Salt, freshly ground pepper
Express ham flans
- Preheat the oven to 180 ° C (th. 6).
- In a salad bowl, pour the eggs, whip them with a pinch of salt. Add the heavy cream then the milk. Season with pepper and salt. Mix well.
- Slice the ham. Place it in pre-buttered ramekins.
- Pour the preparation over the ham.
- Bake for 20 minutes.

With a tasty flesh with pink undertones, Paris ham is a superior quality ham weighing more than 5 kg, free of polyphosphate and gelling agent, and containing no more than 1% sugar.
Made from a boneless, salted pork thigh, it is placed in a rectangular mold (hence its parallelepiped shape) and cooked in a fragrant broth of coriander, juniper, cloves and bouquet garni. If the place of manufacture once gave its name to the ham,
nowadays it stems more from the manufacturing process. Today Paris ham represents around 80% of French production.

It is during the skimming of the milk that the cream is made: naturally liquid, it is separated from the milk by a centrifugal cream separator which also makes it possible to select a cream more or less rich in fat. To obtain a thick cream, lactic ferments are added to it (inoculation) which, after a few hours of maturation, gives it a thickened appearance and a more acid taste.
